Sapan Minanga is a sub-region of Tana Toraja on the Indonesian Island of Sulawesi. Coffee has been growing here since the 1850’s by mostly smallholder farmers on family plots. The Catimor varietal is grown here at 1,300 masl and the area produces about 60,000 bags per harvest (not huge by coffee standards). It is interesting to note that in Sulawesi (formerly known as Celebes as which I will never stop referring) they use the same processing method as in Sumatra. This method, wet hulled or giling basah, produces by far the most full bodied coffees anywhere on earth! This coffee is smooth, exceptionally full bodied with an herbiness to it. What makes it a bit different than a typical Sumatra is a touch more acidity, citric, that gives this coffee more complexity and depth. One of my all-time favorites.
