Pacamara is interesting in both its origin and its cup quality. It is a hybrid of the Typica branch Maragogype, a mutation found in Brazil with an enormous bean size, and the Bourbon branch Pacas, discovered in El Salvador. The result is an oversized bean that is smooth and juicy in the cup. It is a low yield per tree so it is not popular with most farmers. Fortunately for us, these producers appreciate cup quality enough to keep growing some on each of their farms. Of course, it also makes this coffee expensive. But worth it!
We purchase this coffee through a company called Gold Mountain, which is direct trade from the farmer to the roaster. They provide credit to the farmers to allow them to obtain necessities for production as well as technical assistance. This was just a brief summary of what is very extensive and important support for the farmers.
